I stayed there 2 nights. First off, it was by far the cleanliest, safest hotel I'd stayed in ages. I had the 8oz Steak dinner Tuesday night and Fish and Chips with garden peas Wednesday night. Both meals were excellent, particularly the steak dinner. The staff were 10 out of 10, especially the young and vibrant staff in the bar. They truly brighten the bar up and are efficient and helpful (one gave me a good tip on a taxi number to call) and made my overall experience really pleasant. I would give the entire experience a 10 out of 10. And my room was quite nice, spacious and my only downer was that out of my window was a stone wall, not a view (i was in room 101) but that was hardly an issue, considering everything else that was so perfecr.

Staff were friendly and the service was fast, but the portions meagre.There was food on the floor under the table next to us, which was empty and set up for the next diners. The carpet was also quite worn in places. The whole place needs a bit of tlc.

Amazing food, friendly and attentive staff, recommended!We came on Friday evening without reservation and had to wait at the bar - it was worth it, as the bartender was quite good and friendly. We were seated quicker than expected.We had Chateaubriand for two and that was very good - I had not had such a good quality from before covid.

The restaurant was fully booked but we got squeezed in thanks to the deputy manager John. We got served by lovely and very professional waitress Sarah. All the members of staff were really nice and very friendly. The service was outstanding. Nothing was a problem. We really enjoyed our evening and once we come back to Brighton we will visit again. Thank you for the pleasant time and your smile :)

The food was absolutely beautiful.Honestly didn't know chicken could be so flavourful. Miller and Carter's speciality is steak but every other dish was so good it was as if they specialised in it.I had never been before but will definitely be returning. Great service, food, cocktails and personally good value for money. Can't wait to go back.

Came here yesterday for my birthday, as I do most years.. food was amazing as always! My Black Angus fillet mignon was cooked to perfection… highly recommended! Our waitress, Sarah, gave us outstanding service for the evening. She was very welcoming and polite. It was a very busy evening and we were very impressed with the service provided. Thank you Miller & Carter!

We had 10 of us stay at the hotel over the weekend. The rooms were lovely - very specious and clean. Lovely shower and great bed. We didn’t have dinner in so I can’t cover the steak unfortunately, but the breakfast was really nice £8 for a full fry up with tea, coffee and juice included. The staff were really friendly and helpful, always asking how we were and making conversation. Overall I can’t fault it!!

Evening meal was Excellent. Waitress awesome and talked you through the menu. Stayed here also, hotel is Excellent also. ÂŁ8 to ÂŁ11 into the centre but offers quiet nights sleep. Definitely going back. 5 star

Absolutely amazing!!! I never order steak from anywhere but here. Wonderful service, truly delicious food cannot fault it. Would highly recommend!

We went here as a special treat. We both had the Master Butcher's Cut fillet mignons, which were tasty and perfectly cooked, and the waiting staff were really good.And that’s it. The Wild Atlantic Scallops should not have been cold, but cold they were. We chose a more expensive bottle of white wine which should have been cold, but it warm it was.The Camembert mashed potatoes only had a hint of Camembert, which was disappointing, while the garlic mushrooms and garlic sautéed greens were completely garlic-free and unappetising: the mushrooms were too bland, and the greens were overcooked, whilst the lobster tail was too dry. And we had to wait a really really long time for our food.At £147 for two of us, it really wasn’t a good experience, especially as we were charged for the scallops which we’d had to send back because they were inedible.
