Wilder in Stroud

Cuisine: British

"Stylish and intimate fine dining restaurant in the heart of the Cotswold market town of Nailsworth. Chef Matthew Beardshall uses his wealth of experience to create a beautiful, bold, suprise tasting menu served Weds - Sat (evening only) at 7.30pm. Book a table and come along with an appetite and an open mind. Our Restaurant Manager, Faye Wolley will be on hand, making sure that you are well looked after and any dietary requirements or dislikes are taken into consideration, before we serve you our menu, (we want all the suprises to be good ones)! Book a taxi (or ask about our lovely rooms close by), but make sure you don't miss out on our stunning, bespoke, wine flight to complete your Wilder experience."

The service was excellent, very attentive, and fast. The non-alcoholic drinks were a refreshing experience and sometimes a good surprise, offering a good alternative to wine. The first couple of appetisers, although well presented, were actually on the underwhelming side in terms of flavours. In particular, the crumpet with marmite butter was a bold idea on paper, but the marmite flavour was too tamed (believe me, I'm no big fan of marmite), and the crumpet abnormally greasy on its own. The duck egg had some good flavours at the bottom (pickled bits), but the scrambled bit was too soggy, almost sickly. The lobster course, although nicely constructed visually, sadly tasted very bland. A stronger seasoning or sauce would have elevated the whole dish completely. By far, the most disappointing course during the evening! The star of the show was the lamb, perfectly roasted and seasoned, buttery, crispy on top, with terrific textures and tasty side dishes. The cheese course had good textures, good flavours and a nice presentation. The woodruff parfait was a good surprise in terms of flavour, though underwhelming visually and could have done with another texture. The following strawberry sorbet had powerful flavours, however the accompanying drink (also strawberry based), made the pairing a bit sickly and redundant (a more herbal focused drink could have brought more contrast). The last 3 courses (parfait, strawberry sorbet and petits fours), technically all desserts, had good flavours individually, but they lacked texture when eaten sequentially. For instance, some of these courses could have done with a génoise, shortbread base or a caramelised sheet, to provide more satisfying texture variations and richness. I was craving cake and biscuits by the end of the meal...The petits fours didn't deserve their name by French standards: they had no layering nor visual intricacy, and were rather "cold mini bites". The lemon "bite" did have a surprisingly explosive flavour: great on its own, but it did clash with my coffee.Overall, certainly not a bad experience: the lamb, the cheese course and the parfait were very well executed and a 3-course version of these would be an exceptional meal. However, the asking price commanded a lot more consistency throughout.

Wow! What an amazing experience. Thank you to Matthew, Faye and Team. Fantastic experience to share with our 2 teenagers that loved everything. Enjoyed each course and matching drinks, so good we can't even decide on a favourite! Highly recommend. Also accommodation at Wild Garlic Rooms just perfect! Thank you!

Absolutely, hands down, the best eating and drinking experience available in Gloucestershire. Unpretentious fine dining, and always a treat, Matthew, Faye, and the team really go out of their way to make all their clientele feel comfortable and entertained, whilst offering a huge range of delicious courses that will stay in the memory for days and weeks to come - and are always happy to cater for any dietary needs, including a fantastic non-alcoholic drinks flight that more than matches the delicious wine flight option. If you’re at all uncertain - yes, it is absolutely worth it. We’ve been back again and again and have never left disappointed!

Fantastic! Great 8 course meal. No menu, you just sit down and get what you're given.I had the alcohollic option with matched wine to each course. My girlfriend had the non-alcoholic option. These too were matched to the course! Very impressive indeed.. The non-alcoholic option is definitely not the second rate option in Wilder. Each course was described by very polite knowledgeable staff. All in all, fantastic. Very reasonably priced too I think.

My husband surprised me with dinner at this fantastic restaurant for my birthday. The whole experience was perfect, we felt really looked after. They were able to cater for our vegan diet, 8 courses of deliciousness with no sense of missing out at all. There's no menu, one course after another is delivered to you with full explanation. The food was delicious, beautifully presented and we were satisfied without being uncomfortably full after. We opted for the flight of wine too, which complimented the meal perfectly. Staff were incredibly friendly and knowledgeable. It was expensive, but worth every penny and we will definitely visit again.

Was excited to return to Wilder for a well overdue visit, and the whole evening once again exceeded my expectations. From the moment we arrived and were warmly greeted by the excellent restaurant manager Faye to the time we finally left at the end of the night, after a fabulous treat of mouth-watering dishes prepared with wonderful, seasonal ingredients from the incredibly skilled Matthew, I couldn’t fault a thing. The cured salmon with lightly pickled cauliflower and caper and raisin dressing was a particular highlight. The accompanying wine flight matched the food perfectly – am very keen to seek out these wines to enjoy again at home, just a shame I won’t be able to do the same with the exquisite food!
