In fact, TasteAtlas reviewers praised the incredible combination of sour orange and annatto, as well as the juiciness of the meat.

This dish originates from Yucatan, as one of the expressions of the culinary fusion of Spanish and Mayan culture.

It is prepared using pork. Marinate in a casserole with achiote paste, garlic, pepper, sour orange juice and salt to taste.

Its cooking is done using a unconventional method. The casserole with the meat is wrapped in banana leaves and buried in an underground oven.

This oven, also known as a pib, cooks food with firewood or hot stones at temperatures of up to 200 °C. In this way, the meat is so tender that it falls apart on its own.

It is served as an accompaniment to tortas, panuchos, quesadillas, tacos and cheese cracklings.
